Gourmet Baked Potato Concept, Spud, to Launch in the West End

Spud, a new gourmet baked potato concept, will open its first unit on New Row, Covent Garden in July. Davis Coffer Lyons acted on behalf of landlord Shaftesbury to let the unit to the new operator, which is led by Paul Williamson, an ex-ops manager at Soho House Group and Sarah Wall, an experienced hospitality operator who runs a number of pubs in south west London.

The 510 sq ft unit will comprise a counter area on the ground floor and a seated area in the basement. New Row is a busy thoroughfare which runs between St Martin’s Lane and Garrick Street, close to Covent Garden Piazza. The thriving street is home to a number of operations including Benito’s Hat and boutique bakery Sweet Couture.

Both Paul and Sarah worked at the Four O Nine, the restaurant above Clapham North, which won the Taste of London 2010 ‘Best Hidden Gem Award’.
